Recipe: Spicy Roasted Chicken - Indonesian Style

What a day!

It's summer, but it's freezing cold today. In fact, it rained in the morning! It's only 25ºC outside and I love it. The weather is just perfect.

This weather makes me hungry all the time. We didn't have lunch - because Antonio woke up late today - so we had lunner [lunch and dinner] instead. We ate at 7:00 pm.

I wanted to eat something extremely spicy, so I cooked this Spicy Roasted Chicken. It turned out quite spicy, though not so much. It tastes great, actually ;)

If you'd like to make it, I'll share the ingredients for you. I don't use any recipe guidance, though. I created the recipe myself.

Recipe: Spicy Roasted Chicken - Indonesian Style

What you'll need:
  • 500 gr of chicken, boil till soft
  • 1 red onion
  • 4 cloves of garlic
  • 1 spoon of salt
  • 1 teaspoon of palm sugar
  • 2 spoons of black soy [kecap, in Indonesian]
  • chilies [I used approx. 8 chilies and added some chili powder, too]
  • 1 teaspoon of terasi [Indonesian] 
  • 1 cm of galingale [laos, in Indonesian]
  • 1 tomato
  • 3 spoons of oil
  • 2 bay leaves
  • 1/2 glass of water

How to cook:
  • Clean the chicken and boil them until it's cooked.
  • Blend the ingredients - tomato, onion, garlic, chilies, terasi and galingale.
  • Heat the oil in a saucepan. Put the blended ingredients in and stir.
  • Add water and heat it back. Add the chicken afterwards.
  • Add the palm sugar, salt, bay leaves and black soy. 
  • Reduce heat. Cook the chicken until there's only a little of water left (approx. 30 miniutes). Don't forget to stir it sometimes.
  • After the chicken is cooked, place it in a bowl. Put it in the oven (170ºC for 15 - 20 minutes).
  • Your chicken is done! Serve it with hot rice and fried onion.
